Protein Packed Tempeh Chickpea Burgers | Vegan

A delicious and protein-packed vegan burger recipe. The smooth plus chunky combination of tempeh and chickpea patties will satisfy your burger craving itch!

Instructions

  1. Prepare flax eggs by mixing together finely ground flax seeds with 6 tablespoons of water. Allow to thicken for five minutes.
  2. Add flax eggs and remaining burger ingredients (besides cooking oil spray and vegan cheese slices) to a large mixing bowl. Mix well using a spoon or your hands (our preferred method!) to combine.
  3. Using wet hands, form the tempeh chickpea mixture into six burger patties.
  4. Spray skillet with cooking oil and cook burgers over medium-low heat for 7 minutes, flip burger patties and top with slices of vegan cheese.
  5. Cover skillet with a lid (to melt the cheese) and cook for a further 7 minutes. Transfer burger patties to a plate and keep warm.
  6. Add the bread rolls to the skillet over medium heat, and brown for about 1-2 minutes per side.
  7. Top toasted burger buns with salad, burger patties and condiments of choice.
