Tomato Basil Pasta Sauce | Simple + Delicious

Vegan tomato pasta sauce, tossed through spaghetti and garnished with fresh basil.

A bright and delicious recipe for tomato pasta sauce with lashings of fresh basil. This sauce is so quick it’s almost ready before your pasta cooks!

Instructions

  1. Add olive oil and garlic to a large pot and saute for 2 minutes over medium heat. 
  2. Pour tomatoes, vegetable broth, sun-dried tomatoes, sugar, salt, and pepper into the pot and stir well to combine.
  3. Bring to a boil, then lower heat and allow the mixture to simmer for 10 minutes, stirring occasionally. Stir in fresh basil and cook for a further 5 minutes. 
  4. Start cooking the pasta while the tomato sauce is simmering. Fill a large pot with water and add a pinch of salt.
  5. Bring water to a boil and cook pasta according to package instructions. Drain and set aside.
  6. Now finish the tomato sauce. Before serving, taste and adjust seasoning as needed.
  7. Scoop the finished sauce into the pot of cooked pasta and toss to combine.
  8. Divide between 4 bowls and sprinkle with a little fresh basil and vegan parmesan cheese. Enjoy!
